Sweet and Savoury BBQ Brussels

Ingredients

  • 4–6 large shallots
  • 1 lb Brussels sprouts
  • 2 tbsp light oil (e.g., olive oil or avocado oil)
  • 1/2 tsp seasoned salt, plus more for topping
  • 1/2 cup chopped chorizo 
  • 2 tbsp hot honey
  • 1/4 cup crumbled goat cheese

 

Instructions

Step 1: Grill the Shallots

  1. Cut the shallots in half lengthwise and place them directly on a preheated grill set to medium heat.
  2. Grill for about 40 minutes, turning occasionally, until they are caramelized and tender. 

Step 2: Prep and Cook the Brussels Sprouts

  1. Peel the outer leaves off the Brussels sprouts and chop them into bite-sized pieces.
  2. Heat a skillet over medium heat and add the oil. Once hot, toss in the Brussels sprouts and sprinkle with seasoned salt.
  3. Cook for about 15 minutes, stirring often, until the sprouts are golden and slightly crispy.

Step 3: Add Chorizo

  1. Add the chopped chorizo to the skillet with the Brussels sprouts. Cook for an additional 5 minutes, stirring to combine the flavours.

Step 4: Finish the Shallots

  1. Remove the grilled shallots from their skins by peeling away the outer layer. Top and tail them, then slice into half-circles.
  2. Add to skillet with the Brussels sprouts and chorizo.

Step 5: Assemble and Serve

  1. Drizzle everything with hot honey and sprinkle with more seasoned salt. Mix to coat evenly. Stir gently to incorporate.
  2. Transfer to a serving dish and top with crumbled goat cheese for a creamy, tangy finish.
